Winery




The San Polino winery occupies the whole of the ground floor of San Polino, a space comprising 240mē. The winery is divided into 4 areas: the area where the wines are fermented and fined, the area where they are aged, the area where they are bottled and the area where the bottles are then stored and ultimately labelled and put into boxes.

In our winery we are vinifying organic wines and so cleanliness is of the highest importance. This means that levels of sulphites in our wines can be reduced to an absolute minimum which is vital as we aim for our wines to be healthy, frank and true reflections of their summer on the vine.

We use wood to vinify and age our wines so in the winery we keep large Slavonian oak vats , french tonneaux and barriques.
